BLT Pasta For One

With crispy bacon and the burst of in-season tomatoes, this pasta dish is an easy weeknight dinner to pull together. Wide-shaped, dried pasta like fettuccine is one option for this recipe, but homemade pasta can be a fun way to up your game. In about 30–45 minutes, you can make enough pasta for several recipes. This BLT Pasta recipe is one way to use up an abundance of cherry tomatoes if you are gardening. A homemade pasta recipe can be found here. This recipe serves 1 person. Multiply ingredients by the number of people you want to serve.

Ingredients

  • 1/2 tablespoon kosher salt ($0.05)
  • 2 strips of bacon cut into 1/2-inch pieces ($0.82)
  • 1 teaspoon olive oil ($0.05)
  • 1 serving of pasta ($0.24)
  • 3/4 cup cherry tomatoes halved ($1.50)
  • 1 ounce handful of watercress, arugula, spinach, or other greens ($0.24)
  • Freshly ground pepper and Parmesan for serving ($0.25)

Instructions

  1. Boil water for pasta. Add kosher salt, add pasta, and cook for 2–5 minutes for fresh pasta (depending on thickness) or per instructions for dried pasta.
  2. Meanwhile, place bacon and olive oil in a medium-size skillet over medium heat, stirring occasionally. Cook bacon until crisp, about 5 minutes. Remove bacon and set aside. Pour off all except 1 tablespoon of bacon fat.
  3. Add tomatoes to the skillet, coating with bacon fat, and season with salt and pepper. Cook over medium heat until tomatoes almost melt—about 5 minutes.
  4. Add half of the bacon and combine with tomatoes. Add pasta directly to skillet, pour in 1/8 cup pasta water, and toss to coat. Add greens and toss with pasta until wilted. Add more pasta water, a tablespoon at a time, as needed to loosen up the sauce.
  5. Season with more salt, pepper, remaining bacon, and Parmesan.
