Dine on a Dime: Deconstructed Egg Rolls

An old favorite with a fun and fresh twist!

Yield: 4-6 servings | Prep time: 5 min. | Cook time: 12 min.

Ingredients

  • 1 lb. ground chicken
  • 1-1/2 C. sliced fresh mushrooms
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp fresh ginger root, minced
  • 2 T. soy sauce
  • 1 (14-oz.) package coleslaw mix
  • 1 T. sesame oil
  • 3 C. hot cooked rice
  • 1/2 C. sweet-and-sour duck sauce

Directions

In a large, heavy skillet, cook and crumble chicken along with mushrooms, onion and garlic over medium-high heat until no longer pink, approximately 6-8 minutes; drain. Stir in soy sauce.

Add coleslaw mix; cook and stir until wilted, 3-4 minutes. Stir in sesame oil. Serve with rice and sweet-and-sour sauce.
