Dine on a Dime: Filipino Pancit
When you have a yen for Asian-inspired flavor but your budget doesn’t include dinner out, make this easy and flavorful dish for the whole family at home. This can become a vegetarian dish by omitting the meat and adding 2 cups of your favorite veggies or a bag of frozen Asian mixed vegetables.
Ingredients
- 1 12-oz. package dried rice noodles
- 1 teaspoon olive oil
- 1 onion, finely diced
- 3 cloves minced garlic
- 2 cups diced cooked chicken breast (can use pork chops or chicken thighs)
- 1 small head cabbage, thinly sliced or shredded (can use bok choy if it’s in season)
- 4 carrots cut into matchsticks
- ¼ cup soy sauce
- 1-1 1/2 teaspoon Chinese five-spice (can use 1 teaspoon ground ginger)
- Salt and pepper to taste
- Lemons or limes for garnish
Directions
- Prepare rice noodles according to package directions.
- If using frozen veggies, heat in the microwave according to package directions.
- Heat oil in a wok or large skillet over medium heat.
- Cook onion and garlic until soft.
- Add meat, cabbage, seasonings and soy sauce.
- Stir-fry until cabbage begins to soften.
- Toss in noodles (and cooked frozen veggies if using) and carrots.
- Garnish with lemons.
