Dine on a Dime: Sausage-Stuffed Delicata Squash

This recipe is loaded with nutrition, easy to pull together for a weeknight meal, and comes in at just over $4 per serving. The savory herbed sausage and salty feta balance out the sweetness from the delicata squash. Delicata squash is lower in carbs than other winter squash and is loaded with beta carotene. Pork sausage could be substituted with ground turkey and if you cannot get your hands on delicata, acorn or kabocha would work fine. (Keep in mind that the cooking times will vary depending on the type of squash and the size.) 

Ingredients 

  • 2 delicata squash, about 1 pound each ($3.22)
  • 3 tablespoons butter ($0.87)
  • 1 yellow onion, chopped ($0.89)
  • 2 cloves garlic, minced ($0.16)
  • 1 pound ground pork sausage ($2.99)
  • 1 apple, cored and diced ($0.98)
  • 2 cups fresh spinach, chopped ($0.98)
  • 1 tablespoon fresh rosemary, chopped ($0.50)
  • 2 teaspoons fresh thyme, chopped ($0.50)
  • Salt and freshly ground black pepper, to taste ($0.05)
  • 1/2 cup feta ($4.95)

Directions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.
  2. Cut squash in half lengthwise and remove seeds. Place squash halves cut side down on the baking sheet and roast for 20–30 minutes, or until the squash’s skin side feels tender when pierced with a fork. Remove from oven and flip squash cut side up to avoid over-steaming.
  3. In a medium skillet over medium-high heat, add 1 tablespoon butter and the onion; cook until translucent, about 5 minutes. Add another tablespoon of butter and the apples, and cook until onions are a deep golden brown and caramelized, stirring often, about 5 minutes. Add a little bit of water when onions start sticking to the pan. Set aside.
  4. In the same skillet over medium-low heat, add 1 more tablespoon butter and the garlic; cook until just tender. Add sausage and increase heat to medium. Cook sausage and break up lumps, about 5–8 minutes, until browned. Add herbs and continue to cook for 1–2 minutes. Add spinach and cook, continuously stirring, until it wilts. Season with salt and pepper, to taste.
  5. Add caramelized onions to sausage mixture. Preheat broiler and arrange squash on the baking sheet. Fill the four squash halves with stuffing mixture and sprinkle with feta. Put under the broiler for 2 minutes or until the tops get brown and crispy. Serve each squash on a plate with any leftover sausage mixture.
