Dine on a Dime: Holiday Breakfast Casserole
The holiday season is the perfect time to serve this homey and festive breakfast casserole. You can prepare it the night before for a quick and easy breakfast that’s affordable for a crowd.
Ingredients:
- 1 pound ground breakfast sausage
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 white onion, diced
- 2 teaspoons salt
- 1 teaspoon garlic powder
- 1 loaf Italian bread, cubed into large chunks
- 18 large eggs
- 1 cup whole milk
- 2 cups shredded cheddar cheese
Directions:
- Heat oven to 400°F. Brown the sausage in a skillet over medium heat for 3 minutes, breaking it into small pieces as it cooks. Add the onion and bell peppers along with 1 teaspoon of salt. Cook until meat is browned, and onion is transparent. Let cool. Drain excess oil.
- In a large mixing bowl, whisk together the eggs and milk. Add remaining salt, 1 teaspoon of garlic powder and cheese; stir to combine.
- Add the bread cubes and cooled sausage mixture to a greased 13×9-inch baking dish.
- Pour egg mixture evenly over the bread and sausage. Press the bread mixture down to soak up the egg mixture.
- Cover the dish with foil and bake for 30 minutes; uncover and bake for an additional 20 minutes. Serve immediately.
