Dine on a Dime: Kid-Friendly Cheeseburger Pasta
Cheeseburgers and pasta? A kid’s dream!
Yield: 8 servings | Prep time: 20 min. | Cook time: 40 min.
Ingredients
- 1 (16 oz.) package penne pasta
- 1 lb. ground beef
- 4 T. butter, cubed
- 1/2 C. flour
- 2 C. milk
- 1-1/4 C. beef broth
- 1 T. Worcestershire sauce
- 3 tsp. ground mustard
- 2 cans (14-1/2 ounces each) diced tomatoes, drained
- 3 C. shredded cheddar cheese, divided
- 2/3 C. Parmesan cheese, grated and divided
Directions
- Cook pasta according to package directions; drain.
- In a large skillet, brown beef and crumble into small pieces, breaking it into crumbles as it cooks. Remove from pan with a slotted spoon; drain.
- Melt butter in skillet over low heat; stir in flour until smooth. Cook and stir until lightly browned, 2-3 minutes, being careful not to let the flour burn. Gradually whisk in milk, broth, Worcestershire sauce and mustard. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Stir in tomatoes; return to a boil. Reduce heat to a simmer, cover and allow to cook 5 minutes.
- Stir in pasta and beef; heat through. Stir in half the cheese until melted. Sprinkle with remaining cheese; remove from heat. Let stand, covered, until all of the cheese is melted.
Tip: For some extra crunch and color, you can top with shredded iceberg lettuce, sliced pickles and/or diced sweet peppers before serving.
