Dine on a Dime: Sweet Potato Crusted Chicken Nuggets

The perfect way to spice up traditional chicken nuggets on a budget!

Yield: 4 servings | Prep time: 10 min. | Cook time: 15 min.

Ingredients

  • Oil, for frying
  • 1 C. sweet potato chips
  • ¼ C. flour
  • 1 tsp. salt, divided
  • ½ tsp. coarsely ground pepper
  • ¼ tsp. baking powder
  • 2 large eggs
  • 1 T. cornstarch
  • 1 lb. chicken tenderloins, cut into strips

Directions

  1. In an electric skillet or deep fryer, heat oil to 350°.
  2. Place chips, flour, 1/2 teaspoon salt, pepper and baking powder in a food processor; pulse until ground. Transfer to a shallow dish.
  3. Combine cornstarch and remaining 1/2 teaspoon salt; toss with chicken and then dredge in eggs. Toss chicken with potato chip mixture, pressing gently to coat.
  4. Fry nuggets, a few at a time, until golden brown, 2-3 minutes. Place individually on paper towels and allow to drain.
