Dine on a Dime: Sweet Potato Crusted Chicken Nuggets
The perfect way to spice up traditional chicken nuggets on a budget!
Yield: 4 servings | Prep time: 10 min. | Cook time: 15 min.
Ingredients
- Oil, for frying
- 1 C. sweet potato chips
- ¼ C. flour
- 1 tsp. salt, divided
- ½ tsp. coarsely ground pepper
- ¼ tsp. baking powder
- 2 large eggs
- 1 T. cornstarch
- 1 lb. chicken tenderloins, cut into strips
Directions
- In an electric skillet or deep fryer, heat oil to 350°.
- Place chips, flour, 1/2 teaspoon salt, pepper and baking powder in a food processor; pulse until ground. Transfer to a shallow dish.
- Combine cornstarch and remaining 1/2 teaspoon salt; toss with chicken and then dredge in eggs. Toss chicken with potato chip mixture, pressing gently to coat.
- Fry nuggets, a few at a time, until golden brown, 2-3 minutes. Place individually on paper towels and allow to drain.
