Dine on a Dime: Creamy Chicken Tacos
It’s taco night – with a twist!
Yield: 8 servings | Prep time: 20 min | Cook time: 3 hrs, or 4-5 hours
Ingredients
- 4 chicken breasts
- 16 ounce jar salsa, at your preferred heat level
- 8 ounces cream cheese, cubed
- 1 packet taco seasoning
- Flour tortillas
- 1 cup mozzarella, shredded
- 1 plum tomato, diced
- 1 avocado, diced
Directions
- Spray slow cooker with non-stick cooking spray.
- Place chicken, salsa, cubed cream cheese and 1-2 tbsp of taco seasoning in the slow cooker, and cook on HIGH for 3 hours, or LOW for 4-5 hours.
- Shred chicken with a fork and let it rest to absorb the salsa mixture for a minimum of 15 minutes.
- Serve in flour tortillas. Top with shredded cheese, tomatoes, avocados or your favorite taco toppings.
