Dine on a Dime: Chile-Honey Chicken and Sweet Potatoes with Chive Yogurt Sauce

Chicken thighs, sweet potatoes, and carefully chosen spices combine to bring a little life into your weeknight routine. Prep work is minimal; spices from the pantry and sweet potatoes packed with nutrients keep this dish under $2.50 a serving—even with organic chicken. Cayenne, a touch of ginger, chile powder, honey, and the yogurt sauce pack a punch of flavor.

Ingredients:

Chicken and potatoes

  • 3 tablespoons honey, warmed ($0.56)
  • 1/4 cup olive oil ($0.60)
  • 1/4 teaspoon cayenne pepper ($0.02)
  • 2 teaspoons chile powder ($0.20)
  • 1 tablespoon kosher salt ($0.09)
  • 1/2 teaspoon black pepper ($0.02)
  • 1/2 teaspoon ground ginger ($0.26)
  • 1/2 teaspoon garlic powder ($0.02)
  • 2.5 pounds organic skin-on, bone-in chicken thighs ($7.48)
  • 1 1/2 pounds sweet potatoes, peeled and cut into 1” thick wedges ($1.92)
  • 1 tablespoon chives, chopped ($0.29)

Chive yogurt sauce

  • 3/4 cup Greek yogurt, divided ($0.34)
  • 1/4 cup packed chives ($2.00)
  • 1/4 cup parsley ($0.36)
  • 1 teaspoon lime juice ($0.15)
  • 1/2 teaspoon garlic powder ($0.02)
  • 1/2 teaspoon sea salt ($0.02)
  • 1 jalapeño, seeded ($0.25)
  • 1/2 teaspoon chile powder ($0.05)

Directions:

Chicken and potatoes

  1. Heat oven to 375°F.
  2. In a large bowl, mix the warmed honey, olive oil, cayenne, chile powder, salt, pepper, ginger, and garlic powder until thoroughly combined. Add the chicken and sweet potatoes to the bowl and toss until completely coated.
  3. Place the chicken (skin side down) in a large cast-iron or other oven-safe skillet over medium-high and cook for 2 minutes. Flip the chicken and add the potatoes to the skillet. Put the skillet in the oven for 25 minutes, until the chicken is cooked and the sweet potatoes are tender.

Chive yogurt sauce

Meanwhile, in the base of a food processor, add 1/2 cup of Greek yogurt, chives, parsley, lime juice, garlic powder, salt, jalapeño, and chile powder, and blend until smooth. Pour the sauce into a bowl and mix in the remaining 1/4 cup of Greek yogurt until smooth.

Serve the chicken and sweet potatoes with dollops of chive yogurt sauce sprinkled with chives.
